Red Lentil Curry!!! Ingredients 2 cups Red Lentils 1 Onion 1 tbsp Vegetable oil 2 tbsp Curry Paste 1 tbsp Curry Powder 1 tsp Turmeric 1 tsp Cumin 1 tsp Chili Powder 1 tsp Salt 1 tsp Sugar 1 tsp Garlic 1 tsp Ginger 1 can Tomato Puree (1 small can tomato paste + 1 small can water) 1. Wash lentils in cold water until they run clear and put them into a pot with water to cover and simmer until they are tender. 2. While lentils are cooking, caramelize the onions in vegetable oil. 3. While onions are cooking, combine curry paste, curry powder, turmeric, cumin, chili powder, salt, sugar, garlic, and ginger into a mixing bowl. Mix well and add to the onions once they are cooked. Stir for 1-2 minutes. 4. Stir in tomato puree and reduce heat. Allow the curry base to simmer until the lentils are ready. 5. When lentils are tender, drain them briefly.
